Butter Cookies:
- Preheat oven to 375 degrees F (190 degrees C).
- Cream together 1 cup (2 sticks) of Anchor Unsalted Butter and 1 cup of sugar until light and fluffy.
- Beat in 2 eggs one at a time, then stir in 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes, or until golden brown.

Butter Chicken:
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add 1 pound of boneless, skinless chicken breasts, cut into 1-inch pieces.
- Cook until browned on all sides.
- Remove the chicken from the skillet and set aside.
- In the same skillet, heat 2 tablespoons of butter over medium heat.
- Add 1 onion, chopped, and cook until softened.
- Add 2 cloves of garlic, minced, and cook for 1 minute more.
- Add 1 teaspoon of ground ginger, 1 teaspoon of ground coriander, 1 teaspoon of ground cumin, and 1/2 teaspoon of turmeric.
- Cook for 1 minute more, stirring constantly.
- Add 1 (14.5 ounce) can of diced tomatoes, undrained, and 1 (10.75 ounce) can of condensed cream of chicken soup.
- Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Return the chicken to the skillet and cook until heated through.
- Serve over rice.
